    How can I do the following things…

    1. Remove galleries from the home page but keep the editor’s choices and popular news?

    2. Make popular news show more than 3 items at once?

    3. Limit the number of categories shown on the home page?

    I am pretty competent in PHP but if you could point me in the right direction that’d be great. Maybe these are just settings?

    You can remove the Gallery Block totally. Then you can add Popular News ShoetCode with configuration
    You can mange the categories from NewsPress Options > Categories
